Banana Bread with Pecan topping
Have some ripe bananas lying around the kitchen like I did? Whip up this delicious banana bread and don't let them go to waste!

Wet Ingredients
1 1/2 cups ripe mashed bananas
2 tablespoons dried flax meal
1/3 cup unsweetened plant milk ((I used coconut ))
1/3 cup coconut oil ((melted))
2 tablespoons grade A maple syrup
2 tsp pure vanilla extract
Dry Ingredients
1/3 cup coconut sugar ((add more if you like it sweeter))
1/2 cup rolled oats
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp fine sea salt
1 cup all-purpose flour
1/2 cup spelt flour
1/2 cup chopped pecans ((for topping))
1 tablespoon coconut sugar ((for topping))
Instructions
Preheat the oven to 350°F (180°C). Lightly spray a 9x5-inch loaf pan with oil and set aside.
In a large bowl, mash bananas until almost smooth, and make sure you have 1 1/3 cups.
Stir wet ingredients into the banana until combined.
Stir dry ingredients into wet mixture, one by one, in the order listed. Stop stirring when there are no flour patches at the bottom of the bowl.
Spoon the dough into the loaf pan and spread out evenly. Add pecans, sprinkle coconut sugar, and gently press them into the dough to adhere.
Bake loaf, uncovered, for 45 min (your time may vary depending on your oven, keep checking it!), until lightly golden and firm on top. The top of the loaf should slowly spring back when touched.
Dip a chopstick or long toothpick in center to check that the loaf is done - item should come away clean with no raw dough left on it
Once done, place the loaf pan on a cooling rack for 30 minutes. Then, slide a knife around the loaf to loosen it and gently remove it from the pan, placing it directly onto the cooling rack until completely cooled (or to hasten the cooling process, transfer to the fridge for 45 minutes).
Slice loaf once cooled and add vegan butter or jam or whatever you wish. Chomp a piece! You're done.
